Creamy Red Potato Soup

Tasty Goodness in a Bowl

8 cups Water
6 cups Almond Milk
3 lbs of Cubed Red Potatoes (after washing thoroughly)
4-6 Cloves Minced Garlic
1/2 Diced White Onion
1/3 Cup Coconut Flour
Fresh Parsley
Pink Himalayan Salt (to your preference)
Butter (optional)

Bring all together to a boil. Then simmer on low until potatoes, onions, and garlic are cooked to completion (AKA: soft). It is normal for almond milk or potatoes to cause frothing on high heat. Lower heat if needed and stir often.

Dish out and enjoy!
