Fresh Spinach with Garlic

Good source of iron.

I used to think that cooking fresh food required too much skill–skill I didn’t have.
I’ve learned over the past two years that is a faulty belief.
Today, I made fresh spinach with garlic. Super simple.

Spray a large skillet or frying pan with olive oil.

Mince 2-3 garlic cloves and sauté in pan for a couple minutes.

Cover pan with fresh spinach leaves. Keep moving leaves around inside the pan until the heat starts making them shrivel up. Don’t let them sit still on heat for too long. You don’t want them to burn. Add more leaves, as needed. Repeat until you have desired amount.

Plain and simple. That’s it. Serve up on plate and eat!
