Veggie, Potato, & Cheddar Soup

Comfort fresh food in a bowl.


2/3 pot of water, 1/3 almond milk
2.5 lbs cubed fresh white potatoes (or more for desired thickness) – with or without skins
1-2 cans of Sweet Corn or Dairy-free Creamed Sweet Corn or fresh sweet corn
Diced fresh carrots
Diced fresh celery
Pink Himalayan salt (to taste)
Fresh or dried Parsley (optional)

Bring to a boil, then lower to a simmer until potatoes are soft all the way through.

Dish out and sprinkle with non-dairy cheddar.
