Yellow Squash Patties

Shred two squash gourds.
Place in medium-size bowl.

Add 3-4 eggs. Mix into squash.

Add 1/4 cup Coconut Flour. Blend into mixture.

Add black pepper and pink Himalayan salt (amount = your preference) and blend into mixture.

Spray pan, then spoon mixture onto pan on stove into patty-size piles, flatten with fork, and cook on medium heat until light brown. Flip. Cook on other side until egg is finished lightly browning.

Makes 6-9 medium size patties.
