Pumpkin Spice No-Bake Energy Bites

You will need:

1 cup rolled oats
1/2 cup pumpkin puree
1/2 cup nut butter (almond or peanut butter)
1/4 cup honey or maple syrup
1 teaspoon pumkin pie spice
1/4 teaspoon pink salt (3-4 twists of the grinder)
1/4 cup chocolate chips (optional), mini preferred

Instructions:

In a large bowl, mix together the rolled oats, pumpkin puree, nut butter, honey/maple syrup, pumpkin pie spice, and salt until combined. Stir in chocolate chips, if using. Roll mixture into small balls (about 1 inch diameter) and place on baking sheet. Refrigerate for at least 30 minutes to firm up before serving. Store in an airtight container in the fridge.
