TOFU SQUASH PATTIES

1 large yellow squash shredded
2 large eggs
1/3 carton Extra Firm Tofu scrambled/mashed with fork, drizzled with gluten-free soy sauce
3-5 grinds of pink Himalayan salt

Mix all ingredients in bowl and pour into patties on skillet and fry.

Optional: garnish with black pepper to liking.

Makes 6-8 medium-size patties.
