Choco-Banana-Oat Gluten-Free Cookies

1 ripe banana (mashed)
1/4 cup Peanut Butter
1 cup rolled oats (gluten-free)
1 Tbsp maple syrup
1/3 cup dark chocolate chips
(I use Ghirardelli 72% Cacao dark chocolate chips)
1/3 c chopped nuts of choice (I used pecans)
- In bowl, combine the mashed banana, peanut butter, and maple syrup.
- Stir in oats.
- Fold in chocolate chips and chopped nuts.
- Scoop onto a lined baking sheet and flatten.
Bake in oven at 375F for 10-12 minutes.
Makes 6 medium-size cookies.
