Choco-Banana-Oat Gluten-Free Cookies

1 ripe banana (mashed)
1/4 cup Peanut Butter
1 cup rolled oats (gluten-free)
1 Tbsp maple syrup
1/3 cup dark chocolate chips
(I use Ghirardelli 72% Cacao dark chocolate chips)
1/3 c chopped nuts of choice (I used pecans)

  1. In bowl, combine the mashed banana, peanut butter, and maple syrup.
  2. Stir in oats.
  3. Fold in chocolate chips and chopped nuts.
  4. Scoop onto a lined baking sheet and flatten.

Bake in oven at 375F for 10-12 minutes.

Makes 6 medium-size cookies.
